Marco Pace’s Expertise Introduced to the world of hospitality by my father, I started working on the floor at a very young age. Part-time from the age of 16 to 18 years old at L'Angolo Pizzeria & Ristorante in Formia, Italy. Turned 18 I was managing the main room with 2 chef de rang and 1 commis de rang. By the age of 19 I was managing the whole FOH, indoor room and terrace. At 26 I moved to London and worked for Angela Hartnett in Murano Comp. Under one of the best female chefs of the UK, I developed my skills and my knowledge considerably. The responsibility of being in charge of one of the most purest Italian restaurant in London also gave me leadership and problem solving confidence. At 29, I moved to Manicomio in Duke of York Square, as Assistant Manager. The pandemic and the lockdown led to a new challenging experience which helped me to grow in my work versatility, team communication and reinventing the business. Got back to Italy for 1 year, I reinvented the concept, the service and the F&B offer of the first business I've ever worked in, L'Angolo, as General Manager. In 2021 I moved to Amsterdam looking for new challenges and got hired by the Hilton Amsterdam as F&B supervisor, with huge ambition and the will to show one of the biggest company in the world what I am capable of.
