Peter Gualtieri’s Expertise A hospitality expert specializing in off-premise contract catering and concessions for cultural institutions, private organizations and non-profits. During the past eight years, while at the helm of the Brulee Catering team, we achieved exponential revenue growth from under 10 million in revenue to over 20 million annually. Directly responsible for over ten separate business units across the Philadelphia region. This included, Center City District, Please Touch Museum, Free Library of Philadelphia, National Constitution Center and Brulee’s off-premise catering division to name a few. In addition, led efforts in managing all food and beverage services for PHS Annual Flower Show in 2021 and 2022. Collaborated with the Horticultural Society, City of Philadelphia, Fairmount Park Conservatory and others as the show was held outdoors for the first and second time in its 150+ year history. Growing up in a five-generation family restaurant business (Barrels – originally of South Philadelphia since 1959), I learned to treat each and every account and guest as though they were part of my family. My passion is for every guest to have an excellent and memorable experience. Previous experiences include leading the opening of food and beverage operations for The Met Philadelphia, Rothman Cabin, Top Chef Quickfire and the Museum of American Revolution and more. The true joy of my career has been grooming and mentoring inexperienced talent into hospitality professionals. While at Brulee, I was privileged to watch many of my protégés form an exceptional staff that is second to none in the industry. My disciplined financial and strategic business planning helped guide Brulee through the COVID-19 Pandemic and the corresponding rebound of business. Partnering and collaborating with other Brulee leaders on changes to organizational structure, menu development, marketing and operations for a Pandemic and post Pandemic environment. I am excited to explore opportunities that will allow me to build and lead a team in growing new food and beverage industry projects.
